Embassy Recipe: Mexico

Chiles en Nogada is one of Mexico’s most emblematic dishes, traditionally served in August and September. It honors Mexico’s independence, created in 1821 by nuns in Puebla to celebrate the visit of Agustín de Iturbide. The dish features the colors of the Mexican flag: green (poblano), white (walnut sauce), and red (pomegranate)—a delicious symbol of unity and patriotism. It’s a baroque dish with Mexican and Spanish ingredients a true testament of syncretism of our traditions and cultures.
